ZOUG, ENTRE NATURE PITTORESQUE ET URBANISME BRANCHÉ
Situé en plein cœur de la Suisse, le canton de Zoug associe parfaitement une nature pittoresque et un urbanisme branché. La région de Zoug est une véritable perle: petite, mais raffinée. Avec ses lacs scintillants, ses douces collines et sa charmante vieille ville, Zoug est un paradis aussi bien pour les amateurs de nature que pour les fans de culture. Deux expériences sont à découvrir lors d’un week-end à Zoug : le Freiruum, un espace de loisirs qui s’étend sur 11 500 mètres carrés et l’incontournable marché du samedi, se déroulant à la Landsgemeindeplatz, où les marchands ambulants de toute la région se retrouvent pour vendre fruits, légumes et autres délices, plongeant ainsi ce quartier historique de la ville dans une ambiance exceptionnelle.

Le Freiruum de Zoug est un espace de loisirs diversifié offrant de nombreuses activités aux petits comme aux grands. Le visiteur peut y savourer des spécialités internationales au Food Market ou faire le plein d’énergie dans l’une des plus grandes salles d’escalade de Suisse. Sur une superficie de 11 500 mètres carrés, il est possible de déguster des spécialités culinaires issues du monde entier, de faire la fête, d’apprendre à cuisiner, de déguster un café, de sauter, de grimper, de rebondir et même de travailler le cas échéant, et ce, sept jours sur sept, entre les différentes activités.
On ne s’attendrait pas nécessairement à trouver une installation semblable au Freiruum dans une petite ville comme Zoug. Et pourtant: Zoug a de quoi surprendre. Quand on s’intéresse à l’histoire économique de cette petite cité, on constate qu’elle a toujours été ouverte sur le monde. Et c’est précisément au beau milieu de la ville que se trouve désormais une vaste halle de 11 500 mètres carrés qui invite petits et grands à se régaler et à s’amuser. Le Freiruum est l’aboutissement de la réhabilitation réussie d’un ancien site industriel. L’immense bâtiment du Freiruum est l’une des deux halles vitrées autrefois bâties sur le site de la multinationale Landis & Gyr. Il n’y a pas si longtemps, on y fabriquait encore des compteurs pour le marché mondial avec du matériel lourd. Les machines ont déménagé, et depuis 2019, c’est un style de vie urbain qui s’est emparé de l’ancienne halle.
LE FREIRUUM, THE PLACE TO BE
Ici, on se retrouve pour passer un bon moment avec des amis ou des collègues, pour découvrir de nouvelles saveurs ou pour assister à une conférence dans un lieu «cool». Le Freiruum répond aussi aux attentes des plus jeunes. Les enfants à partir de 6 ans peuvent profiter d’un parc de trampolines de 400 mètres carrés ou s’essayer au parkour. Les plus petits, quant à eux, peuvent s’amuser dans le Spiilruum. Les adultes peuvent également s’adonner à des activités physiques et pratiquer l’escalade dans l’une des plus grandes salles de bloc de Suisse. En résumé: le Feiruum est «the place to be», comme l’annonce fièrement Marco Husi, directeur d’exploitation. «Le Freiruum, c’est comme une rue de quartier animée», précise-t-il. On y trouve tout sous le même toit, mais sans les bruits de la rue.
DES DÉLICES EN PROVENANCE DU MONDE ENTIER
Le cœur du Freiruum est constitué de la grande halle de restauration offrant 500 places assises disposées autour du bar central. Celui-ci fait aussi office de point d’information. Seize restaurateurs s’occupent du bien-être physique de leurs hôtes. Ceux qui le souhaitent peuvent entreprendre un voyage culinaire autour du monde. Cuisine libanaise, grecque, tibétaine, italienne, américaine, mexicaine, française, hawaïenne, thaïlandaise, japonaise ou suisse… toutes sortes de gourmandises y sont proposées. Au bar, on trouve tout ce que le cœur désire, et même les amateurs de café et de vin sont comblés. Pour ceux qui préfèrent mettre la main à la pâte, des ateliers cuisine, brasserie et œnologie sont également organisés.
Une halle vitrée est toujours le meilleur choix lorsqu’il s’agit de faire entrer autant de lumière que possible dans un grand bâtiment. Cette particularité qui était autrefois importante pour travailler sur les machines fait désormais le bonheur des nombreuses plantes: elles transforment l’ancienne salle de fabrication en oasis de verdure et soulignent la décontraction urbaine des lieux.
Le Freiruum est si vaste qu’il n’est généralement pas nécessaire de réserver. Un autre point en faveur de la liberté ! On y trouve toujours une petite place, et même un coin au calme pour travailler, sauf à vouloir fréquenter ce salon zougois surdimensionné en groupe. Il n’y a que le vendredi et le samedi soir que les lieux sont parfois pleins à craquer, explique Marco Husi. Des événements sont organisés en permanence et pendant la période de l’avent, le Freiruum se transforme en marché de Noël.

Le samedi, la Landsgemeindeplatz de Zoug se transforme en un marché d’un genre particulier. Les marchands ambulants de toute la région s’y retrouvent pour vendre fruits, légumes et autres délices, plongeant ainsi ce quartier historique de la ville dans une ambiance exceptionnelle. Flâner parmi les innombrables stands en profitant de l’hospitalité zougoise dans le décor pittoresque de la vieille ville est une expérience incontournable.
Le samedi matin à sept heures trente, la bande-son sur la Landsgemeindeplatz se résume au cliquetis des caisses de fruits et de légumes, ainsi qu’au claquement des éléments en bois et des bâches des stands déployés par des mains habiles. En un clin d’œil, les étals se couvrent de produits alimentaires et de délices de toutes sortes. Sur le stand de Niklaus Elsener, les produits ovins sont à l’honneur : lait de brebis pasteurisé, fromage à pâte dure, semi-dure, molle ou persillée, fromage frais, formaggini marinés dans l’huile de colza aromatisée aux fines herbes, yogourt à différents parfums et charcuterie ovine. Le fromager et agriculteur qui exploite la ferme Schäflihof à Edlibach (ZG) coordonne les opérations : il s’est spécialisé dans un marché de niche et est présent le samedi depuis neuf ans. « Tous les samedis ! », précise-t-il. « La fiabilité, c’est important. » C’est ainsi qu’on fidélise les clients. Niklaus est loquace – pour le moment. Quand la clientèle arrive vers neuf heures, il a bien trop à faire pour discuter.
CRÉATIONS ET SURPRISES DU MARCHÉ
Nous continuons donc notre balade jusqu’au stand de Lilly Deichmann qui a installé une immense table couverte de fruits et de légumes en provenance de la ferme Enikerhof à Hünenberg. Tomates, poivrons, aubergines, céleri, radis, pommes de terre, carottes, choux-raves, blettes… toutes ces couleurs et toutes ces formes constituent un tableau merveilleux. L’odeur des épices fraîches titille les narines au point de nous donner envie de nous mettre aux fourneaux sans attendre. Chez elle, on trouve les premières cerises de l’année, des haricots verts sauvages, des asperges blanches et vertes, mais aussi, à notre grande surprise, de juteux oignons géants introuvables en supermarché qui s’avèrent en outre extrêmement faciles à émincer. Pour l’expérience gastronomique, rien ne vaut la dégustation de quelques fraises, dont la couleur et le goût ont de quoi séduire. Lilly nous informe que 13 variétés différentes poussent dans sa ferme et nous montre les bouteilles de jus de coing et de rhubarbe, deux spécialités de saison actuellement très recherchées. À la vue des pâtisseries et du vinaigre de framboise joliment emballé (sa dernière création), la faim se fait sentir et nous donne envie de jeter un coup d’œil à l’étal d’un autre chef de file du marché : celui de Louis Schifferle. Chez lui, tout tourne autour de l’olive, qu’elle soit marinée entière ou pressée pour obtenir de l’huile. Mais ce n’est pas tout : il propose également du pesto, du tzatziki, de la tapenade, du houmous et des antipasti à base de câpres et de cœurs d’artichaut. Sans oublier les citrons d’Almafi dont la robe jaune vif attire l’attention dans la lumière du matin. Comment y résister ?
Nous aurions bien acheté un bouquet d’œillets de poète, de tournesols, de lys, de roses ou de pivoines chez « Blumen Röbi », mais le panier de notre vélo est déjà bien rempli. Qu’à cela ne tienne: nous glissons de beaux bouquets de fleurs estivales dans deux sacs supplémentaires que nous accrochons à gauche et à droite du guidon. Maintenant, place à la concentration, histoire que nos précieux achats survivent au trajet jusqu’à la maison!
